Hearty pumpkin soup

This bowl of comfort is all you need when you're wishing for a hearty yet soothing meal. That's right, it's nutrient rich to make a meal! Vegan pumpkin soup is a vegan soup that incorporates all the vitamins of pumpkin into an aromatic, warm soup. It's made with pumpkin puree, garlic cloves or water, seasoned salt and freshly ground pepper to taste.

This dish is easy to make and tastes delicious! It's a warm hug in a bowl !


Fresh pumpkin is not only tasty but good for you! One cup contains over 220% vitamin A, over 70% vitamin C, 10% iron and 8% calcium. Vegan pumpkin soup provides you with all the nutrients of fresh pumpkin! It's also high in fiber; one cup has 10 grams of fiber. Fiber helps to help regulate blood sugar levels, lower cholesterol and reduce constipation.

As for the flavour has a tinge of sweetness to it but he black pepper accounts for the spice you like. 😏😉





Recipe:

COOK TIME: 30 MINS


INGREDIENTS:

• 1 cup diced pumpkin

• 1 onion (chopped)

• 5-6 cloves of garlic

• Nutritional Yeast (optional)

• Handful of cashew nuts or 1 cup so,/ milk.

• 1 cup coconut cream

• 1/3rd cup plus 1 tablespoon olive or any other neutral oil

• Water (as required for blending)

• Salt and pepper to taste

• Pumpkin seeds for garnish



WHAT TO EXPECT IN TERMS OF TASTE: Pumpkin soup is creamy and has a tinge of sweetness to it.



DIRECTIONS

1. In a sauce pan, heat olive oil and let garlic and onion cook till transparent.

2. After the onion and garlic is cooked, cook the diced pumpkin and cashew nuts (if not using soy milk).

3. After the vegetables are soft, transfer them to a blender and cool them till they are ready to blend.

4. Blend the veggies with some water and nutritional yeast (as required to blend easily).

5. After blending, transfer it again to a sauce pan. This is the stage to cook with coconut cream, add soy milk (if you haven't used cashew nuts), and chosen spices. After that, pour it into a bowl and garnish with pumpkin seeds.


Serve Hot!
