Hug in a bowl: Broccoli Soup

On a cold and wintery night,

What more covet you,

Than a broccoli soup.


Okay that did not do so well. 😅😅 But I really hope this broccoli soup recipe does!! 🤗 It’s super creamy, comforting and leaves you with the umami flavour (of Nutritional Yeast!!). 🤤But don’t worry if you do not have Nutritional Yeast, you can still enjoy the flavours of this one. 😍




This recipe makes 1 bowl:


Ingredients:

1. ½ head of a small sized broccoli

2. 10 cashews soaked in boiling hot water

3. 1 tbsp Vegan butter/ Olive Oil

5. 4-5 chopped garlic pods

6. Coconut milk or cashew or oat milk. (I went for the cashew-oat milk from Good Mylk)

7. Salt and pepper to taste

8. Flour or Spreadable agar agar (GF option) (please do not use regular agar agar, you do not want a broccoli mousse).


Method:

1. Cut the half head of broccoli and boil it along with the cashews. Drain the water with a sieve and wash it under some cold running water.

2. Drop them in the blender to blend.

3. In a sauce pan, heat butter and sauté the chopped garlic and drop the chopped garlic in the blender.

4. Add the milk of choice (it better be plant based) into the blender and it’s now time to blend the broccoli, milk and sautéed garlic. The quantity of the milk should be increased slowly and gradually since we want the mixture to become like a paste.

5. Remember the saucepan that contains your butter? Add some flour to it. (if you are going for GF or choosing to add spreadable agar agar, then do not add this).

6. Let it thicken and add the your blended broccoli paste in this.

7. Keep stirring till it thickens.

8. At this stage, feel free to add and melt vegan cheese, nutritional yeast, salt and pepper to taste.

9. If you were going to add apreadable agar agar , then this is the stage.

10. Let the soup simmer for a while and then serve hot.


You can garnish this with pepper, oregano, pumpkin seeds, thyme or some cream! 😉 Have fun with it!


Notes:

  • If using garlic powder, then there is no need to add garlic pods. Just add the garlic powder with the salt and pepper.

  • If you are using salted butter, be careful with the salt. There is probably no need to even add it.
